Courgette dip recipe

I had this yummy quick, tasty and relatively healthy ( getting there) breakfast today. To cut down on food waste – I used last night’s courgette dip, mixed in some tuna and made a lovely spread. Also made some fried eggs with red onion and sausage on the side. In honesty I googled the recipe. My twist was the cumin powder and my free style measurements.

This is what you need to make the dip ( 3 people)

1. 1 teaspoon of Tahini

2. 1 clove garlic – diced

3. 3 big scoops of plain yogurt

3. Under a half teaspoon of cumin powder

4. Salt to taste

5. 2 medium sized oven grilled courgettes ( 20 mins in the oven) once cooled down – scoop out the watery bits in the middle.

6. A nice pour of olive oil

7. Fresh squeeze of lemon juice

Blend it all well! and there you have some dip.
